Roasted Red Pepper and Eggplant Spread (Macedonian Tolcheni)


Balkan Caviar This vegetable spread is a staple in the countries of Macedonia, Bulgaria, Serbia and Croatia although it goes by different names. Our family makes it in large batches during the summer months when the peppers and eggplants are in season and freeze in 8 oz portions to last through the winter. It is used as a condiment or dip and delicious served with Lamb and over rice. Enjoy!

Mini Taco Nachos


Everyone always loves these individual nachos. You can make the meat mixture up ahead of time and store in the fridge in tupperware until ready to use. The meat mixture freezes well too. If you are short on spices, just use a taco packet instead. I often use leftover taco meat that I need to use up.

Mustard-Roasted Potatoes (Bon Appetit)


These delicious potatoes have a crispy garlic outside and a sweet and creamy interior. From Molly Stevens in Bon Appetit Magazine (Dec. 2007). You can try different herbs and spices; rosemary and thyme work well, and if you like spice, add a little cayenne pepper. Eat the leftovers with some eggs for breakfast. Yum! DO AHEAD: Can be made 2 hours ahead. Let stand on baking sheets at room temperature. Rewarm potatoes in 425 F oven for 10 minutes.

Tangy Meatballs


These meatballs are so delicous. They're not sweet and sour, but definitely have a good tangy flavor. They are best served alone or with rice, but noodles will do too. They make a great appetizer or can even be the main dish.

Rachel's Roasted Red Pepper Hummus


Yes, this seems a wee bit labor intensive and time-consuming just for hummus...but believe me, it's WORTH IT. I don't like peppers generally and definitely not peppers in chunk form, but the roasting, like sauteeing, softens them and makes them able to blend, and the freshness really imparts that flavor better than jarred roasted peppers. You'll never go back to storebought or recipes using jarred peppers after this!

Simple Green Olive Tapenade


From Andrew Schloss' Cooking with Three Ingredients: Tapenade, the rich olive sauce of Provence, is usually made from ripe black olives. This rendition gives tradition a tweak by substituting leaner, saltier green olives. It is just the right spread on toasts to serve with drinks, but is equally good served as a cold sauce for grilled chicken or fish, or as a dip for vegetables.

Classic White Dinner Rolls


From King Arthur Flour, this is cool because it's made in a pie pan opposed to a regular baking pan. Could probably sub the butter for oil and white flour for wheat flour easily. I'm including both the original instructions, and bread machine instructions!

Prosciutto Stuffing Bites


From Super Food Ideas, this was a side as part of a Greek Style Roast Lamb Dinner, but I think they would also make a great appertizer.

Baba Ghanoush


I love eggplant and I just can't get enough of this dish. Eat it with chips, pretzels, pita, French bread or right off the spoon! Best of all, it's low fat too

Taco Platter


Found this recipe in a newspaper. Changed a few things, made it and it was a hit. You may want to change the heat in this dip by using mild or hot taco sauce or adding or omitting the green chiles.
